Pantry / Freezer Challenge

So I have been doing the coupon thing and the shopping the sales thing for a while now and realized over the weekend after cleaning out my freezer and my pantry that I have a big back stock of food. So I decided to give myself a little challenge. Over these next two weeks, we are going to clean out the freezer and pantry. After making my menus, I realized it was necessary to pick up a few things at the grocery, i.e. milk, lettuce, bread, but the rest would have to come from our stockpile. It took a bit of an open mind and inventiveness, but I had enough food to last us for two weeks worth of dinners. We are currently on Day 5, and I have to say, it feels really good to eat what we have and know that I won't be spending our grocery money these next two weeks. Some of the meals are really simple, some are meals that were cooked and previously frozen, some are meals previously frozen from precious friends and some of the meals are really ellaborate. It was fun to try and create meals of what we already had on hand, it definitely required some creative thinking. The bad side of this...by the end of next week, my freezer and my pantry will be bare :(

Wish us luck on our two week challenge!

His Big Party

Son had his first birthday party a while ago. He had a great time! He was absolutely precious. We had an Airplane theme party, complete with Boarding Passes, Clouds, Airplanes, and Baggage Claim. I even found an Airplane t-shirt for him to sport for his big day. All of our family was here and they gave him some amazing new toys to play with. He enjoyed his cake. He got the icing and the cake in his hands and then looked at me with this expression that said, " Mom, can I really eat this?" It was precious! After the toys, the food, the cake and all the people, he was exhausted and took a 3 1/2 hour nap. It was a great first birthday party. Here are a few pictures from his big day!

Professional Pictures

We finally had family pictures made a few weeks before Christmas. I have been wanted to have family pictures made for a couple of years and was finally able to catch Hubby at a weak moment and he conceded. So glad we did this! And as a bonus, we were able to have a great Christmas Card this year thanks to the help of a professional. Here's a peek at some of the pictures.

Seeing Santa

Like usual, I am way behind. Oh well. So last year when we took the kids to see Santa, Son was one month old. His reflux was already in full swing and the screaming was in full effect. We put him in Santa's lap and he was quiet as a mouse. Go figure.

This year...not so much. Daughter was super excited and well-prepared with her list in hand. She told Santa exactly what she wanted and they chatted a bit. She was in heaven. We let her have her moment before we placed Son in Santa's lap. I put him on Santa's lap and he was fine for about 3 seconds, but as I backed away for the photographer to snap the photo, he started wailing like someone had pinched him. Poor Santa. So we have one happy child and one not so happy child.

Thankful

This time last year, I had just gotten home with my new baby boy and was adjusting to being a mother of two. It has been a year full of changes and adjustments, but I have so very much to be thankful for. The Lord has blessed me in so many ways since Thanksgiving last year. Thanksgiving is such a special time of year. I feel like it gets overshadowed by Christmas. Nowadays, everyone puts up their Christmas decorations right after Halloween and Thanksgiving just gets pushed by the wayside. And I truly think that is sad. I think it's so easy to get wrapped up in the day to day grind and focus on the negative things in our lives or the things that aren't the way we want them. Thanksgiving is a time when we can all sit down with family and friends and focus on the wonderful things in life and be thankful for our many blessings. I am thankful for my husband, my children and our family that lives so close. And I am thankful for the wonderful friendships that I have made this year. I am thankful for my husband and the daily sacrifices he makes so that I can be home with our children. I am thankful that I don't have to work and am able to be home with my children and watch them grow. I am thankful to the Lord for our health and happiness.

I hope you all had an amazing Thanksgiving and were able to take some time out from this busy time of year and realize all you have to be thankful for. Happy Thanksgiving!

My Son

To my Son,

When I found out you were going to be a boy, I'll admit, I was a little unsure. I felt completely ill-equipped. I'm not really what you would call an outdoor girl, not really big on animals, or dirt, or monster trucks or the like. I was nervous. You were born on a Saturday morning at 9:53 weighing a little over 8 pounds. You struggled the first few minutes of your life outside my belly, but you pulled through with flying colors. After a whirlwind of visitors during those first few hours and a little bit of sleep for Mommy and Daddy, I finally got to get a good look at you and have a proper meeting between you and I. I was completely smitten. You stole my heart. You were so cuddly, I couldn't help but just sit there and hold you and stare at you. Any nerves that I had about having a boy, you put those at ease during our first meeting.

The first few months, you struggle with some reflux. Your Dad and I felt so bad for you because you couldn't seem to get any relief. You and I became best buds during those months. It seemed as though I was the only one who could soothe you. Around 4 months old, you started to come out of it and became this amazingly happy child. You smiled all the time. I watched you find a new love in your life...your sister. You would just sit there and stare at her, watching her every move. I remember one day, she finally got you to laugh. You were sitting in your walker and she got you so tickled. You laughed and laughed! It was precious! Mum Mum was your first word, Da Da came next, and a few words later came Sis Sis. You love your toys. You could sit for an hour in the same spot, just playing with your toys. You took your first steps four days before your first birthday. You are such a happy child, with such a sweet disposition.

Your happy spirit has been such a blessing to our family. I simply cannot wait to watch you grow up. I can see you are going to be a very inquisitive, loving, kind and good-natured child. I am honored to be your mom and promise I will give you my best every day.

Love,
Momma

FOUR

Four has been the number on my mind this week. My little, baby girl has turned four this week. Can you believe that? I simply cannot. I feel like it was just yesterday I was meeting her for the first time and now she's this little person. A little lady, who loves her baby doll and coloring and anything princess and cooking in the kitchen with mommy. Where did my baby go? Wasn't she just born a few minutes ago?

She has had quite the celebration. First a party for her friends to come to. Then it was the special snack at school on her actual birthday. Then it was to Chuck E. Cheese and out to eat. And the grand finale was today. The conclusion to the celebrating. A party for her family. Let me say this...I'm exhausted. And Daughter? Is she tired? No ma'am. Still awake with excitement and energy at 9:00 p.m. I mean, I feel like I should have done endurance training to have been ready for all this celebrating. But I would do it all again to see the enjoyment and happiness on her face. Priceless!

To my precious girl - I love you more than words. You have made my life so incredibly wonderful! Your laughter is so contagious and your smile brightens my day. I love watching you interact with your brother and teach him how to play with toys or roll a ball or clap his hands. Your Daddy and I are so proud of you and are so thankful for you! Love- Mama

A Decade Done

Today is the last day of my 20s. Tomorrow I will turn 30. How am I feeling? Nostalgic. I realized the other day how much living I have packed into this last decade of my life.

Love knocked on the door of my heart, a ring found my finger, a house became our home, vows were made, a child was born, a marriage was tested, careers changed, a marriage began to thrive again, and another child was born. And that's just the BIG stuff, not the wonderfully small things that happen in my daily life.

It's not that I don't want to get older, its just that it seems sad to me to leave such an amazingly wonderful decade. I guess it's just a challenge...make the next decade as special as the last!
